As a business, we’re pleased to offer the “Medical Allergy” Gluten-Free pizza to those with medically diagnosed gluten allergies or sensitivities, and the “Dietary Preference” Gluten-Free pizza to those who prefer a gluten-free diet.
What’s the difference? The “Medical Allergy” Gluten-Free pizza is prepared following a strict protocol to minimize the risk of cross contamination. From the washing of our hands, and cleaning of our stone-deck ovens, pizza screens, and use of separate and dedicated baking tools, to the handling of the actual gluten-free shell, prepping, baking, cutting and boxing of the finished product, we’re committed to keeping our customers safe and free from the worry of cross contamination. Not an easy thing to do in a gluten environment, but our customers have asked for it and we’ve delivered! As of this writing, we have sold thousands of gluten-free pizzas and have not received a single report of cross contamination. We believe this achievement demonstrates our commitment to customer safety and satisfaction.
The “Dietary Preference” Gluten-Free pizza on the other hand is just that, a dietary preference. As such we DO NOT follow the protocols associated with the “Medical Allergy” Gluten-Free pizza, but instead prepare, bake, and complete the “Dietary Preference” Gluten-Free pizza following a protocol, where it is possible and likely this product might experience some but minimal cross-contamination (Not recommended for individuals with Celiac Disease or severe Gluten Allergies).
